This masala brings a warm, earthy depth and irresistible aroma to your curry — turning an everyday meal into a flavorful celebration. And every pinch supports fair trade, sustainability, and community empowerment.
Ingredients:
-
1 kg chicken (bone-in or boneless, as preferred)
-
2 large onions, finely sliced
-
2 medium tomatoes, chopped
-
1 tbsp ginger-garlic paste
-
3 tbsp oil or ghee
-
1/2 cup yogurt (whisked)
-
1 tsp turmeric powder
-
1 tsp red chili powder (adjust to taste)
-
1 ½ tsp coriander powder
-
1 tbsp Mahanadi Garam Masala
-
Salt to taste
-
Fresh coriander leaves for garnish
-
Water as needed
Instructions:
-
Marinate the Chicken
In a bowl, mix the chicken with yogurt, turmeric, salt, and a bit of Mahanadi Garam Masala. Let it marinate for at least 30 minutes (or up to 2 hours for deeper flavor). -
Sauté the Onions
Heat oil/ghee in a heavy-bottomed pan. Add sliced onions and sauté until golden brown. This step is key for a rich curry base. -
Add the Aromatics
Stir in the ginger-garlic paste and cook until the raw smell disappears. -
Tomatoes and Spices
Add chopped tomatoes and cook until they soften. Then, add red chili powder, coriander powder, and the rest of the Mahanadi Garam Masala. Cook until the oil begins to separate from the masala. -
Cook the Chicken
Add the marinated chicken to the pan. Sear on high heat for 3–4 minutes, then reduce the heat, cover, and let it simmer. Add water for desired consistency and let it cook until the chicken is tender and juicy. -
Garnish and Serve
Finish with freshly chopped coriander leaves. Serve hot with basmati rice, roti, or naan.
Pro Tip: Add a pinch more of Mahanadi Garam Masala at the end of cooking for that final aromatic lift — your kitchen will smell like an Indian festival!
More Than a Meal – It’s a Movement
When you cook with Mahanadi Garam Masala, you’re not just elevating your meal — you’re becoming part of a story that honors farmers, empowers communities, and celebrates authentic Indian flavor. Every bite supports a better, more flavorful world.
