Recipe Sneak Peek: Spicy Thai Red Curry
Looking to take your palette on a vacation to Thailand? That’s why we have compiled a simple recipe for Thai red curry to start off your spice journey. Have no fear because our next post will contain step by step instructions
- Ingredients:
- 1 tablespoon vegetable oil
- 3 cloves garlic, minced
- 1 tablespoon grated ginger
- 3 tablespoons red curry paste (adjust to your spice preference)
- 1 can (13.5 oz) coconut milk
- 1 cup chicken broth
- 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 cup red bell pepper, sliced
- ½ cup green beans, trimmed and cut into bite-sized pieces
- 1 tablespoon fish sauce (or soy sauce)
- 1 tablespoon brown sugar
- Fresh cilantro and lime wedges, for garnish (optional)
- Instructions:
- Heat oil in a large pot or Dutch oven over medium heat. Add garlic and ginger, cook for 30 seconds until fragrant.
- Stir in red curry paste and cook for an additional minute, letting the flavors release.
- Pour in coconut milk and chicken broth, bring to a simmer.
- Add chicken, red bell pepper, and green beans. Simmer for 15-20 minutes, or until chicken is cooked through and vegetables are tender-crisp.
- Stir in fish sauce and brown sugar, adjust seasonings to taste.
- Serve hot over rice, garnished with fresh cilantro and lime wedges (optional).
